After extraction, the bagaso crushed agave fibers were reintroduced into the open air fermentation tanks. By letting the agave fibers participate in the ferment, an added layer of depth, vegetal richness, and unmistakable mouthfeel were coaxed out. 100% Organic Single Estate Grown Blue Webber Agave, fermented with fibers and rested in glass 6
